Simple yoghurt & soda bread

Ingredients:

 

400g wholemeal flour

50g oats

400ml yoghurt

1 teaspoon bicarbonate soda

1 tablespoon of oil (oil or rapeseed)

½ teaspoon salt

 

Optional: omega sprinkle, tablespoon of rehydrated seaweed

such as dulse,

or wakame for extra iodine

Method:

  1. Pre heat oven at 200 degrees C

  2. Mix the dried ingredients together

  3. Add the yoghurt and the oil

  4. Mix well with a spoon, the dough should be wet

  5. Sprinkle flour on a flat roasting tin

  6. Drop the dough on the tin, shape it in a round

  7. Cut a cross across the dough

  8. Bake in the hot oven for 40-45 minutes

  9. The bread’s bottom will sound hollow when it is ready

  10. Wrap in a damped towel to cool off.

 

(To use as sandwich or toast slices: Bake the bread in a bread tin rather than cooking it on a flat roasting tin, grease and line the bread tin first.)
